Huehuetenango, is one of the most renowned of Guatemala’s coffee-growing regions, with the meaning of “Place of the Ancients” is located on the highest non-volcanic mountain range in Central America. The Presidium, launched in 2002 is one of the first Slow Food Presidium projects dedicated to coffee, now involves more than 200 small-scale producers who cultivate this variety by hand-picking the berries and then processing them using the washed method, followed by drying the beans in the sun for at least three days after stripping.
On sensory tasting, candied fruit and almond aromas, light body and medium-high acidity accompanied by lingering cocoa notes emerge on the palate.
